Can you believe it is the first day of August already? How is your summer so far? For me the month of July seemed to fly by and I know some of you feel the same way. Recently my focus has been trying to eat a healthier and balanced diet.
As a vegetarian, many people assume that my diet is already healthy and I eat veggies by the truckload. Let me tell you, this is not the case at all. I actually struggle with healthy eating and veggies especially as I am a picky eater on top of everything else. The trick for me is finding creative ways to incorporate veggies in everyday meals.
Oh, and did I mention that I hate to cook? Some of you that are shocked by this statement and love being in your kitchen cooking up a storm…and that I envy you more than you know. The other half of you are nodding your heads in agreement and reaching for a frozen dinner (Like me 50% of the time).
Now don’t get me wrong, I have my moments where I feel like being creative in the kitchen and cooking up a storm. My best dishes often come from improvising with whatever I can find lurking in my pantry and refrigerator. The funny part is trying to recreate that magic delicious dish…it never quite comes out tasting the same as the original. Baking is definitely more my speed and trying to make my favorite desserts healthy is a lifelong mission for me.
Being busy and on the go most of the time also lends to my displeasure of spending excess time preparing a meal. Standing in front of a hot stove is the last thing I want to do after baking in the hot Florida sun on my way home. However, I know that for my health (both physical and mental) I needed to focus on my diet and incorporate healthier choices.
Of course some days are better than others…I mean who can resist half price Nutella cheesecake? ;) But it’s all about finding your balance, not beating yourself up over a treat and knowing that tomorrow is a new day and a chance to be better than the day before.
